View Full Version : Almond cookies-is there a trick?

Hi, everyone!
Last night I made some almond milk for the first time (it was delish!!), and decided to use the almond pulp for cookies. I used about 1 cup of the almond pulp, 2 frozen bananas, and a handful of strawberries. I sweetened it with agave. I guess because the bananas were frozen, the batter came out rather runny. I used a cookie press to form my cookies on the teflex sheets and threw them into the dehydrator overnight.
This morning, the texture was not to my liking...they were more of a fruit leather. Should RAW cookies come out like the traditional SAD cookie's texture, or will they come out like the fruit leathers? Maybe I should have thrown in some ground flax seeds?
Any ideas on this?

These Choc chip cookies by Mysticat are definately my fav, they taste just like the real thing and nothing like a fruit leather,

Basically, I'd say that because you used such a small portion of nut milk pulp to the fruit, you basically DID have the makings for a fruit leather there...not to mention the fact that almond milk pulp is already kinda...soft and "airy".
Next time, use more of the pulp (I actually would have probably dried it first and then ground to flour) and if there's not enough of it, grind up some almonds or other nut or seed and add that to it. I use ground oats also in my cookies. The "dough" itself should be fairly thick as opposed to runny if you want that "real" cookie texture.

I don't have cacao I have carob, can I just use 1 full cup of carob with the coconut oil and freeze?

Sure can, personally i just use Green and Blacks cocoa powder, it's not raw but i don't care, it's a small non-raw addition to my diet and doesn't cause me any problems and doesn't cost the earth.

my carob powder just came in today. I'm still new at this. I could never even make SAD cookies from scratch so this will be interesting.

I tend to use All Cashew flour and mix the chips in carefully by hand so as not to melt and colour the cookies, they are just Too good,
but keep in the fridge if you don't want them to melt on you,
otherwise use Oat groats for a heavier more substantial cookie.

When I make cookies they consist of 95% dry ingredients.
