I'm finally attempting to make these:

I made the tortillas, then ate them all as chips/bread before I could even make the fillings, LOL! So now I'm going for a second round, but making the spicy beans first. Problem: I don't have coriander - I thought for sure I did! I swear there is some little guy hiding in my cuboard who steals my herbs when I'm not looking, LOL.

After taking a look at this recipe, do you think I could just leave it out, or is there a good sub? Thanks sooo much!!

Sherah,

A quick Google search revealed that, FRESH coriander could be subbed with parsley or even cilantro. But ground coriander seeds...I got THIS reply from Google Answers:

"...fresh coriander tastes NOTHING like dried ground coriander seeds, so do NOT substitute that.
Dried ground coriander seeds has a slightly lemony taste - it is not strong like cinnamon. If your recipe calls for a LOT of coriander, don't make that recipe till you get some. If its only a tsp or less, just skip it.
I always keep coriander in my spice collection, because, like nutmeg, it gives a certain undefinable taste to dishes that is very pleasant. It is never used as a central taste, however, and can be easily omitted."

Thankyou!! Just FYI for those making this is the future - I ended up leaving it out and it was SO delicious, I kept dipping in the batter with a spoon! So I guess it's OK to leave it out, but I'm definitely going to buy some when I go to the store next time. Thanks for your help!
