OMG, I just tried shredded zucchini with Alissa's marinara sauce and a bit of nut cheese and can I just say WOW! I'd been holding out on making the zucchini 'noodles' because I thought I had to have a specific kitchen tool...but shredding with a simple grater works as well.
It tasted way too good to be RAW:O)
I totally understand!!! We had a raw fettucine alfredo last night and it was amazing!!! My stepkids were asking if it was raw too, and I made these avocado poppers that were also a hit that they thought couldn't possibly be raw. :)
Isn't it so cool when something is both tasty and healthy? There's something so right and so wrong about that at the same time!

EvaRB,
what are avocado poppers? :)
[URL="http://rawinspiration.blogspot.com/2007/06/avocado-fries.html"] Here is the link to them. The author calls them fries, but I think poppers is more accurate. You can totally change up the recipe too so it is sweet if you want, with a mix of coconut flakes and yeast topped with agave. I bet that would be good. These are amazing! We just tried them yesterday, and I think my boys have a newfound respect for me. :D

holy yumminess- i wish i had a dehydrator.
you all will have to enjoy them for me- just when you are almost full, think of me and take the last bite....yum, yum, yum:p
EvaRB: thank you so much for the recipe link...it's inspiring me!
You don't need the dehydrator! I ate some of them before dehydrating! They're good both ways!!!
It's actually really tasty with some sort of zucchini pasta dish like you started out talking about! :) :)
