I'm having definite cravings for cheese and so far the recipes I've tried are not quite doing the trick. Help! I have Alissa's book and have tried some of her cheese recipes. While they are good, they aren't quite quelling the craving like some cheese sauces that I've had at a raw restaurant. (Unfortunately they were not willing to share their recipe. :( )

I'm especially looking for a cheddar cheese sauce. I wouldn't mind a great recipe for "taco meat" and "tortillas" as well. Thanks everyone!

Hi! I wish I had a great Cheesey recipe to share. I make a simple taco meat out of walnuts that I grind in the food processor, then I add cumin, nama shoyu and cayenne to taste.. I mix it in well.. I generally make a taco salad with chunky chopped romaine leaves, pico de gallo, guacamole, the taco meat and a macadamia or cashew nut sour cream (soaked nuts blended with lemon juice, celtic salt & nutritional yeast) heaps of cilantro and jalapenos. It really satisfies my Mexican cravings.

I have a recipe for a sunflower seed cheese that's like a spread. 1/2C lemon juice, 1/3 C nama shoyu, 4-5 cloves of garlic, 2 & 3/4 cups sunflower seeds finely ground.. blend until smooth. you can adjust the lemon juice and nama shoyu to taste as well.

I was just going to suggest nutritional yeast (which I think is the same as brewer's yeast!) although it is not perfectly raw or something. Alissa does have it in her book, and I just used in last night for the first time! It was great. I made these avocado dippers that were sort of like non-spicy Jalopeno poppers. They were grrrreat.

brewer's yeast and nutritional yeast are two totally different things, although sometimes brewer's is incorrectly called nutritional.

brewer's yeast is spent yeast after brewing. nutritional yeast is yeast grown specifically to be a food product.

All right. I had actually read that nutritional yeast was similar to brewer's yeast, but I guess they're not that similar! In any case, I was satisfied with the cheesiness I got specifically from nutritional yeast. :)

I make my seed cheeses with seeds/nuts and rejuvelac. I let it ferment a little and then it satisfies my cheese craving. The only problem is you have to eat it quickly because it will sour on you if you don't eat it within 2 days.

I don't remember who posted this before, but alot of people here were raving about the likeness to SAD cheddar cheese sauce. I copied and pasted it to my ongoing word document containing recipes from everyone here.

Rich Cheddar Sauce
Adapted from "Rejuvenate Your Life" by Serene Allison

1/2 large red bell pepper
¼ c water
1 c raw cashews, sunflower seeds, or almonds
1 T tahini
2 T nutritional yeast
1 ½ teaspoon sea salt
2 teaspoons onion powder (or a small slice of onion or 1 tbs or so of green onions)
1 clove garlic
2 T lemon juice

Blend until creamy. Add more water if it is too thick.

In which restaurant did you eat? Do they have a recipe book?

Thank you for the recipe Portiz! I will try it.

The restaurant is in Asheville and I'm actually sitting in it now having a scrumptuous raw salad (carrot/beet pate, marinated onions, seaweed, and lots of great veggies.) and who should walk by but their raw chef! (He's usually not here when I'm here.) He's going to send me his recipe and I will be happy to share once I get it!

Hey Stacy ~ Just thought you'd like to know that I was able to find nutritional yeast at Sprouts in Plano. They sell it in little clear plastic containers and store it on the shelf over top of the bulk containers. I just happened to look up one day, and there it was, just staring at me. ;)

Oh yes, this recipe is delicious and one of my favorites. I use it as a dip (pate) or dehydrate rounds of it for "cheese" slices. It is very like Nacho Cheese in flavor and I serve it to SAD eaters all the time as a dip and I haven't had anyone not like it.

Yes, it is Asheville NC! Enjoy your visit. The restaurant is "The Laughing Seed" and while it is not a raw restaurant, per say, it is vegetarian. They always have a "dragon plate" on the menu which is a raw salad with pate, seaweed, etc. Very yummy. And most days they have a raw tappas plate on the special menu. In fact, I'm back here again for supper having today's special. I'm having pasta with marinara sauce, a spinach "soup" that is quite delicious, and a beautiful salad with "creamy hemp/basil" salad dressing. For dessert is a banana almond pie with raw cacao! Yum-oh!

They are closed on Tuesdays, though. Let me know how you like it if you do go. Asheville is a great city to visit...terrific downtown. Enjoy.

The only thing that might have lured me back to the dark/sad side would be Raw cheese:o

since this thread is all about cheese i hope you guys don't mind me piggy backing off of the cheese recipes request...i have been craving (off and on over the last few months) cheezits....I saw some cheese crackers on oneluckyduck but didn't really want to pay that much..has come up with a really crispy, crunchy and cheesy cracker?
