I just cannot tolerate flax seed at all. It gives me horrible gas, cramping and intestinal pain. I also cannot eat any gluten containing grains (I have celiac disease). I want to find a way to make wraps with gluten free grains and without flax seeds. Is this possible? Any recipes?

I saw on here somewhere that someone was making corn tortillas in her dehydrator and when they were still soft she would use them as wraps. I don't remember who wrote it or which recipe thread.
Also I saw a recipe on GreenChefs where they blended young coconut and made a wrap out of that.
Is buckwheat gluten free? I thought it was. I knew a woman who was making crackers from sprouted buckwheat.

I copied down an incredibly simple recipe for tortillas made out of spinach. I'll dig it up and pass it along. I haven't had a chance to try it yet. I tried to make tortillas out of sprouted wheat berries, burnt out my grinder, made a cement-like mess destroying my kitchen and had nothing but globs of globbiness come out of the Excalibur, so you're not missing anything there.
I've got 25 pounds of raw buckwheat coming in tomorrow. :D I know that I'll sprout it, then dehydrate it for cereal, other than that I'm open to experimenting with it. It's a comfort throwback to my macrobiotic days.....

advance, you definitely want to get into buckwheat.
You need the RAW buckwheat GROATS, which are pale, (not dark brown, NOT KASHA, kasha is toasted buckwheat). You soak the raw buckwheat groats, or soak and sprout, then blend with other ingredients into bread, cookie, cracker, pizza crust etc. recipes. You can make granolas and cereals.
The possibilities are many! :D

How about subbing chia seeds for the flax in the various recipes? Wouldn't that work?

also for wraps you can use nori sheets, collard greens, etc.!
maybe someone could post a buckwheat recipe or two for you.

My fave wrap is nori sheets. They hold the wraps well together. My cat loves nori. I moisten it and tear pieces off the wraps for her. :)

Advance, was this your first time having flax seeds? When I first ate them I had the same reaction but the next time around I was fine.
