i read somewhere that mixing coconut oil and miso makes a buttery tasting spread? anyone ever try this?

I've never tried that (I think I saw that in Ani's book) but I have used coconut oil and a little sea salt and it gives a nice buttery flavor to certain things. I've used it spread (well, rather brushed) on dehydrated breads for a buttery flavor as well as in many of my dessert recipes that "normally" (in the SAD realm) would be buttery. The key is to not use TOO much coconut oil (sometimes I even do a coconut oil/olive oil combo with sea salt) because too much or if it's left in the dehydrator too long, it kinda starts to get that strong coconutty flavor.

But the miso, I can see that working too since it's salty and they can both mix to make a creamy spread or something. I have some white chickpea miso in the fridge...maybe I'll give it a try and see how it is.

i have expeller pressed coconut oil so no coconut taste. :)

what brand of coconut oil do u use? i am lookingto purchase one with NO coconut taste. thanks

i use organic Spectrum expeller pressed.

yumm i tried some coconut oil mixed with miso paste and cinnamon on sprouted bread. veryy goood.
