Today I spent the afternoon making the Carrot & Parsnip Pesto Pasta :p
I give it a 4 stars out of 5. This dish to me is better as a side dish along with other goodies and not just on its own. It's very earthy and reminded me of being at our last Samhain potluck. Very fall'ish dish!

Parsnips

Peeling with a skin peeler. Then sliced each ribbon into 3's for a thinner "pasta"

Pumpkin pesto

The mushrooms and tomato's rested in the dehydrator for 2 hours coated in organic old pressed extra virgin olive oil.

Sprinkle soaked pumpkin seeds to garnish.

I like the idea of using parnips for noodles. Nice photos and it looks good. :)

Must try the combo...

Have you ever heard of a spiral slicer?
Would sure save a LOT of time hand cutting your noodles!
( : (PS Alissa sells them on her site)
