Tomato Basil Bruschetta
I am playing with my end of the summer veggies. This recipe is delicious. I hope you like it!
* 10 ripe Roma (plum) tomatoes, chopped
* 2 -3 cloves garlic, minced
* 1/2 red onion, Spanish onion or sweet onion, chopped
* 6 to 8 fresh basil leaves, chopped
* 3 tablespoons extra-virgin olive oil
* Salt and freshly ground black pepper, to taste
In cold weather I add more olive oil to make it seem more filling. This is also good on Onion Bread "crackers."
