(FROM ANALEAH!!!) -----Mmm, I just made prickly pear ice cream and it turned out so yummy and it was the most beautiful color ever! The seeds were a pain to eat in the ice cream though, that was the only bad thing but once I just decided to swallow the seeds instead of chew them up it wasn't so bad. I also tried a mixture of the prickly pear, banana, strawberry and a little pineapple and it turned out so yummy. I wonder what else I can make with the cactus fruit? I haven't tried dehydrating any but I would think with all those seeds it wouldn't be so good. Anyway just thought I'd post this ice cream thing in the hopes that someone will read it and want to try it out too!
Heehee recipe....umm I just froze a prickly pear cactus overnight and then added some frozen strawberry, pineapple and banana. I don't know the amounts but I suppose just put whatever in it that you like. Prickly pear by itself is good too but I only had one frozen so I added some other fruit to it.

mmmm, just made some squash soup that turned out really good. It was my first time making anything with raw squash before so I was a little nervous but it actually tastes really good raw and so do the seeds (anyone know if the seeds are healthy to eat?) I used some butternut squash, cucumber, spinach, hot chili pepper, garlic, fresh basil, 1 carrot, 1 avocado and for the liquid a little rejuvelac and some hot water and then after it was all blended up I chopped some yellow bell pepper up and mixed it in with the soup. Then I served it in a hot bowl, mixed some spicy amarillo pepper powder in with it and ate it with some dehydrated sweet fruit bread. Sooooo good! So if you're like me and were afraid to use raw squash, you really should try it out because it has such a wonderful flavor!

Hi everyone, I just made dinner and it was so good I just had to share it. I made pizza crust that was a pretty red/pink color from using some beet pulp in it. I spread some tomatoe sauce on the crust, sliced some portabello like mushroom on top along with some fresh purple basel and yellow and orange bell pepper and spicy green pepper. Then on top some fresh shredded coconut and pineapple which had been dehydrated a few hours. After I took it out of the dehydrator several hours later I covered it in sliced avocado. It was so yummy and looked so pretty. While I was eating dinner with the family I am staying with I offered them a piece and was surprised when the husband really liked it and got pretty enthusiastic about it (which I definately didn't expect as the family eats meat and cooked food and before meeting me they have never known another vegetarian and certainly not any vegans or raw foodies lol). They both went crazy over the raw dehydrated pumpkin pesto stuffed mushrooms and kept telling me how good they were. I was so happy to hear they actually liked some of the food I made and were brave enough to try it! Then we began talking about food and the wife gave me the biggest compliment I have ever received when she said I should be a chef! Anyway I just had to share this meal experience (I feel so high right now) and I hope if you haven't already made raw pizza or stuffed mushrooms that you try it out. I followed Alissa's recipe for the stuffed mushrooms (except I used pumpkin seed pesto instead of regular pestro) which is an excellent recipe and when she says "These taste like a soft, breaded, cooked, stuffed mushroom" it really is true, they taste so buttery and breaded. Thanks for the recipe Alissa!!

This goes great with fruit or raw granola etc. and is soooo good, I could eat it by itself for days.

¾ cup soaked pecans
1 cup pine nuts
¼ cup soaked almonds
¼ cup cashews
2 cups fresh squeezed lemon and/or orange juice
5 or 6 sweet dates and any other sweetener to taste
Enough water to blend and make consistency desired
