Ii am new to raw foods and am a vegetarian. I have read a lot about diet and nutrition with liver concerns and there much concern about fats and nuts in the diet. I do rely on them a lot with my diet. Does soaking seeds and nuts change the fat in any way? I want to adopt raw foods but does anyone have any good information for me?

I do not think that it changes the fat content but it does make them easier to digest and more nutritious.
If you are new to raw then you should not worry too much about fat for now.
You will find that the fattier foods are the ones that best help you to stay raw because they satiate you better and lead to less cravings.
There will be time enough to concern yourself about the fat when the cravings for cooked have past.

A friend loaned me Vibrant Living today, and there is some mention of soaking the nuts removes some of the fat.

I have heard it mentioned that the fat percentage does change upon soaking. The only way it makes sense to me is thinking of it this way...1 cup of unsoaked nuts has more fat then 1 cup of soaked nuts because the water causes them to expand, so there are fewer nuts in the cup.
