Arame Raw??

I had a great Arame salad at my last raw food potluck and went to the local HFS to purchase some. On the back of the package reads...".........
Carefully selected, tender fronds are hand harvested each summer, sun dried, cooked for five hours to tenderize, and thinly sliced before final drying..." I thought they were raw???? :eek:
