I have seen that a lot of recipes call for miso, but I am wondering why it is "okay" to use since it is derived from soy, which is supposedly not something that humans are supposed to consume.

Just want a heads up - is it because of the fermentation process that it is okay?

I've actually been wondering this myself. In the same token, I'm told that Braggs is not good because it's cooked and bean based. Maybe someone can help clear things up.

I buy chickpea miso from the health food store and it has no soy. It is from South River Miso. It has a wonderful taste. I don't use any soy.

I personally won't use anything made from soy. But it seems like if you really love it, and use it in small amounts, it's not the end of the world.

Just my opinion though :)

I hope someone will correct me if I'm wrong but I think I read where Miso is not raw per se but is living because of fermentation and therefore is believed to have health benefits. This is from memory because my books are not available right now.

true ,unless the miso is pasturized after fermentation ,you can usually tell by whether it is in a fridge isle in the store ,if its not chilled its deader than a door nail :D :D :D
