Anyone have EASY nut-and-avocado-free recipes? Matt thinks he may be allergic to avocados, so he has to stop eating guacamole for dinner every night. He doesn't want to overdo the nuts either. I'm kinda stuck for ideas. (He is all raw).
What are some of your favorites?

Bethany, I just tried this tonight. It's something like a curry sauce. I did not follow a recipe, but I have seen other raw curry sauces on this board.
1 orange, juiced
1 lemon, juiced
1 ripe banana
curry powder to taste
1 tsp freshly grated ginger
a spoonful of honey (1 tablespoon?)
tiny bit of water
I threw it all in a blender and turned it on. I then poured the sauce over sprouted barley and cut up veggies and chopped cilantro. It was enough for 3 to 4 servings. I also could have added garlic and some hot pepper! Maybe next time.
I also thought you could try making sprouted quinoa (sp?) tabouleh. It based on some kind of olive oil, lemon juice, parsley, cucumber, tomato mixture.

as a replacement "dip" try the zucchini hummus in alissa's book. but, be prepared to season it alot more. esp the cumin!! and a little heat too.
are seeds ok? like, maybe a sunflower pate? Raw Food Primer (which i highly recommend) has a carrot croquette recipe that is yummy, think it is just carrot pulp and sunflower seeds (maybe just a few nuts). Email me if you want the recipe...i have it scanned into my computer.
hmmmm....so sad to hear about the avocadoes.....what would i do without them?
pad thai: some nuts, but not alot (just almond butter in the sauce)...mostly veggies...no avo (think this is alissa's). just bean sprouts and yellow squash and the almond sauce.
marinated mushrooms to use in "fajitas".....just top with salsa and sunflower refried beans.
that is what i have off the top of my head (the top is small, i know :) )

you can make guac w/ peas and zuchinni ~just add more herbs ,and some oil .....

say no to avo guacamole!!!!!
2 zuchinis (chopped)
2 small cucumber strips or "fingers"
blend well then add...
2 tbs of olive oil or 6 walnut halves
1/2 cup of cilantro
1/2 cup of tomato
1/4 c of lemon or lime juice
1 tbs of jalepino
1 1/4 tsp of salt
1 tsp garlic
1 tsp ginger (optional)
1/4 cup green onions
blend to a quac consistency
