Please excuse my ignorance, but what is the difference between Carob Powder and Cacao? I am ordering a few things off of Alissa's website and do not know which one/both to order.

I really like to mix them together, the best of both worlds.

Ooh, I've never cared for carob, and I simply *adore* cacao. If you want the closest thing to chocolate taste, I'd say go with the cacao. Or try them both, try mixing them together, to see what you like best. Everyone has an opinion about this, so keep that in mind. :D

the biggest difference for me is the caffeine. Carob has none, and please correct me if I am wrong but cacao does...I don't mind the stimulant factor but my yeast gut does not like it at all

It does not have caffeine. It does have a chemical with reactions very close to caffeine. Don't remember the name of it. I believe Fredrick Patenaude wrote a couple of articles about the adverse effects of this chemical on the human body. There has been much discussion on the subject here in the past if you want to do a little research.

Some people love it for the caffeine like rush they get. Others have all the bad side effects of it; sleeplessness, acid reflux, jitters to name a few. You can try it for yourself and if you have problems likely someone here would be glad to buy the remainder of what you have.
