View Full Version : Allissa's Fudge Balls

Hi Everyone,

I've made the recipe for Fudge Balls twice and both times they've come out too moist to really make into balls. I end up using a large cookie scoop and I coat the bottom with coconut flakes so they don't stick to the plate.

Any ideas on how I can dry them out? Is there anything I can add to make them drier?

I just tried to make these fudge balls today and I found the same thing.

I added chopped walnuts in hopes they woud make them less sticky and moist. But it didn't make any differece. I rolled them the best I could and then placed them on parchament paper and put the in the fridge. I just had one after they have been refidgerated for 6 hours and they are still very sticky. I can't understand how Alissa takes them with her when she goes out to dinner or just being out. I don"t see how you coud take them with you as they are so sticky and not a solid ball.

I would really like to know how to keep these balls firm so you could take them with you to take care of your craving for chocolate.

Joann!! You and I must be twins..LOL I did the exact same thing!! I added walnuts...they do taste good,but sticky.

You know what I bet would help? I bet if we added some of the raw oats it would soak up all the sticky? Kwim? I think I'll order some raw oats from Allissa's site.

I made these last week and they turned out great -- did you process the nuts really fine first? I was almost afraid I'd processed them too much because when I went to make the balls all the oils were pouring out all over the place -- I made a huge mess with oil running across the backs of my hands and dripping on the counter! But I ended up squeezing as much oil out of the "dough" as I could because it just seemed like too much oil to eat! Then I made the balls and popped them in the fridge. After they were refrigerated for a while they really did end up fudgy. I thought I'd made them wrong with them still ending up tasting good, but maybe I did it right!

when that happens, i add shredded coconut or some ground flax to the mixture - with whatever recipe is too wet.

and thanks! i needed an idea to take to a bday party tonite! its gonna be alissa's fudge balls!

Locaroca, why did you have to process the nuts? The recipe I have for Alissa's Fudge Balls states to use almond butter. Is there an updated recipe? I got mine from page 491 in 'Living on Live Food". I was going to make these today, but now wonder if there is a different recipe out there. Help?

I found them to be quite sticky as well, but I just make them up and either let them set for the afternoon or overnight and then roll them out. That seems to help a lot. You still have to be gentle with them. Sprinkle the top of the chocolate mass w/some cocoa powder before scooping portions and then keep your hands "powdered" as well when rolling. I roll them in the cocoa powder and sometimes nuts. They set up very nicely and I just love them.



edit: I believe I go light on the almond butter also and that will help

Laura - They are moist. But they firm up if you store them in the freezer. We add coconut to the mix, and then roll them in coconut, put them on a cookie sheet, and then pop them in the freezer. They are one of the staples for my son with autism. I make them almost daily!:D HTH!:D

Are all of you using Alissa's Fudge Balls recipe from "Living On Live Food"?

I stuck to Alissa's recipe and they came out fine, but I didn't like them at all :o
