View Full Version : Where do you get 2 cups of fresh Coconut Meat?

I am very new at this and last night I made raw ice cream for the 1st time

and everything went ok except I could not figure out where you get 2 cups of

fresh coconut meat and 1 cup of coconut juice. Could someone please tell

me how you get coconut meat out of a baby tai coconut? ( You would need

a bushel of them for this) Also, what is the difference between coconut

water, milk and juice ?

The recipe I used was "One Lucky Duck's Raw Ice Cream"


Here it is: 2 cups cashews soaked for 2 hours and drained.

2 cups fresh coconut meat or milk

1 cup coconut juice

1/2 cup honey or agave nectar

1/2 cup raw virgin cococut oil

2 tbsp. vanilla

Seeds from 1/2 of vanilla bean

1/4 tsp. salt

You blend all together in your blender and then pour into your ice cream

freezer.

I just used the water and the little bit of liquid meat from the two coconuts

and the ice cream came out pretty good and tastes very good but I am really

confused on where you would get 2 cups of coconut meat from these tai

coconuts.

Hey there

I'd be happy to help. Being an islander in South FL gives me a little experience I don't mind sharing.

Coconut are seeds of the coconut palm. And a very intelligent one at that. During the process of their maturity a quantity of water (creates bouyancy for sea worthy travel) is filtered into the nut. If left to it's own devices it will develop into a placental "yolk" off which a coconut palm seedling will live and thrive until dry land is found suitable for rooting. Very few actually make it. YUM!
The young nut, usually with a green to yellowish outer husk, contains plenty electrolyte rich water. A jelly like coating covers the inner seed shell. This is the coconut 'jelly' spoken of. This jelly will continue to grow and harden(mature) inside. A mature coconut is the brown small husky seed you see sold in most grocers. The tough shell is cracked and the inside 'meat' is dug or scraped out . This is the portion that makes shredded coconut and coconut milk. To make the milk, cut up the meat into small chunks and blend with water, the same way you would with nut milks, and strain.

Thai coconuts grow in Thailand where the husk is shaved off for appearance and packaging. Thai Coconuts are young yet many contain enough jelly to be satisfying. With coconuts it's always a gamble.

Also I think the juice in the recipe is water
