I've tried to make a parmesan cheese alternative, with no luck. What I wound up with tasted like anything but that, and the texture was off. I decided to try Parma! It's a raw vegan parmesan substitute made of walnuts and nutritional yeast. It's really yummy and has the perfect texture. I love it! Daughter is complaining about it and it's the texture she doesn't like. But then she doesn't like walnuts. Hehe. I'm sure there is some way to make this yourself that would be cheaper than buying it, but this works for me!:D

Gone Raw may have recipe you are talking about as I did see one there sound same.

Also several others. I typed in parmesan cheese with results there.

I saw a product called Rawmesan on a raw food site, they listed the ingredients so I tried to make some and it was great:
walnuts, sunflower seeds, nutritional yeast, sea salt.

Ithink I used maybe 3/4 C walnuts, 1/2 C sunflower seeds, 1/4 C nutritional yeast, and maybe 1 t sea salt.

Process until parmesan like, and put in a parmesan shaker.

I try going light on "mashed" nuts but do eat nuts in whole form so this surely would add up quickly; however, not tossing the idea either to one day make.

I have made the Rawmesan. I got sick of the WF always being out of it! So, I said I am just gonna make my own! Whoa! Turn out great! (cheaper too than buying the Rawmesan!)
