Hi all,
I'm trying to broaden my options for simple raw veggie recipes, especially those veggies that I've never had a taste for raw but loved cooked (eggplant, zucchini, mushrooms, green beans, etc.) I've been trying to search for some good marinades but can't seem to find anything that has specific amounts (i.e., found a lot of people who say things like "marinade in olive oil and garlic" but how much???

I'd love to put some veggies to marinade in the morning or afternoon and then eat them on a bed of greens for dinner. I'm really looking for something simple and with few ingredients and preparation (like no food processor/blender, etc.) As I've posted before, I'm fighting a roach infestation problem in my kitchen for the past 3 weeks and it's made me grossed out with being too long in my kitchen so I'm just trying to do "throw everything together" type of dishes at least until the roach problem clears and I get over the psychological feeling that my kitchen is filthy (it's not - roaches coming from filthy neighbors who moved out :mad: ) and that if I spend even more than 10 minutes preparing something a bunch of roaches aren't going to dart out from under the sink and climb all over it :D.

I just found this recipe today! :)

Marinade
3/4 cup olive oil
2 T apple cider vinegar
2 T honey
1 t salt
1 t dried basil
3 large garlic cloves
1/2 t paprika
and as much ground red pepper as you like. I probably used at least 1/2 - 3/4 t.

:eek: wow! I hope the roaches clear up!!!

Olive Oil and Vinegar, Apple Cider is Always FAST and EASY......

try this as a template for dressings and marinades. mix n match components from below. You can use as few or as many as you like.

acid such as vinegar, tomato or citrus juice such as lemon, lime, orange, grapefruit, blood oranges, tangerine, kumquats, etc
+
oil such as olive and avocado (oil, chopped or pureed) or nut butters such as tahini
+
aromatics such as onions, shallots, garlic, ginger
+
salty such as miso, soy sauce, sea salt
+
herbs and spices such as rosemary, oregano, cumin, cinnamon, clove, mint, etc
+
heat such as red pepper flakes, hot sauce, sliced chiles, black pepper
+
sweet such as berries, mango, agave, honey
