I am in my 5th week and I must say that I am loving it. I feel like this is how I was meant to eat. I don't know about anyone else, but I am enjoying this. I am eating vegetables and fruits that I've thought about trying and never have. I've never eaten yellow squash, zucchini, crenshaw melons, portobella mushrooms, or eggplants. I didn't have anything against them. I simply never ate them before my raw life began. Now, I am eating zucchini at least once a week. I have alissa's eggplant pizza (with a couple of garlic cloves, onions, and extra tomatoes) in the dehydrator now. I've already chopped off two pieces because it smelled soooo good. It is delicious. I still have 3 or 4 hours left before it's 'done'. I wish that I'd made the whole recipe. I only made one eggplant instead of two. I didn't know eggplant was spongy on the inside! I always imagined it to be like a green or red pepper....mostly hollow with a bunch of seeds. Silly me. I saw a Korean melon in the grocery store last week and that's next on my list of things to try.
Oh, and I have wheat berries and barley soaking. Over the next few days, I will be making soft pretzels, the BBQ chicken fingers, and the meatloaf. Maybe I'll make the brownies from Raw Food Made Easy too. :)
