Out of sheer boredom, I wanted to make something, something nutty :). So in my Magic Bullet (all eyeballed) walnuts and slightly more almonds than walnuts, as well as water, salt and a little agave. Enough water so it's not like a butter.
WOW! It's texture, taste, EVERYTHING was incredibly similar to this organic, amish coutry all natural ricotta cheese, which I loved when I was a kid.
O and if the almonds had been peeled, it would have looked like it too :D
