Bought a new small ice cream freezer and need a recipe for Raw Ice Cream. Made one that was too rich and husband would not touch it!

I've got a few saved from elsewhere in these forums:

Raw Chocolate Ice Cream:

meat of 1 young coconut (about 1 cup)
1 cup of soaked raw cashews
1 cup water
1 cup raw almond milk (2:5 ratio)
1/2 cup raw cacao powder
1/2 cup raw agave
1/2 Tbsp vanilla
1/4 cup grated raw cacao butter (then liquified in dehydrator)

Pour all of this into your Vita Mix and blend until smooth and creamy. Pour into ice cream maker , and process for 30-40 min. Try not to devour in one sitting and remember to share

French Vanilla Ice Cream

Here is a home made raw ice cream that freezes well and doesn't need an ice cream maker. The best part is that is scoops out easily like traditional ice creams. Enjoy!!!!

2 cups soaked almonds (1 1/4 cups before soaking for 6-8 hours)
2 cups pure water or your favorite steeped tea
1 1/2 cups cashew or macadamia nuts soaked 2- 3 hours
2 1/4 tsp. psyllium husk powder
1 cup agave nectar or honey
1 vanilla bean, soft center only
1 1/2 tsp. vanilla extract
1/8 tsp. Himalayan salt crystals

Blend almonds with water or tea. Strain through The Amazing Nut Millk Bag and use only the liquid. Save the pulp for making bread. Blend the milk with the remainder of ingredients until smooth. Pour into a freezable container and freeze overnight or until solid. If the ice cream is too hard when you try to scoop it, let it sit for 5-10 minutes before serving. Enjoy variations by using different flavored teas, cacao powder, cacao nibs and different extracts. Peach tea is amazing!

Raw Chocolate/Chocolate Chip Ice Dream


2.5 cups of filtered water
3 handfuls of cashews - maybe 1.5 - 2 cups?
2 tablespoons raw cacao powder
2 tablespoons Alissa's coconut powder
10-12 medjool dates
1/2 - 3/4 cup of cacao nibs
Squirt of agave nectar

Put everything EXCEPT the cacao nibs into a high-speed blender (like a Vitamix-Mix) and blend until creamy. It will be thick.
Put into ice cream machine, adding the cacao nibs and use the ice cream maker as directed.

At first it's like a soft-serve ice cream, but this freezes well. It is YUM-OH!!!

Thanks for the recipes.

Just read a bit in your blog and noted your concern over no weight loss. I am no expert at weight loss, but I think I am eating twice the calories you are eating and I am losing an average of a pound per week, more or less, which is exactly what I hope for. I probably average two avocados per day and when I started doing that I thought the weight loss became easier. You may not be getting enough fat in your diet. In general, the small amount of food you are eating may be slowing down your metabolism. Maybe you might want to take a closer look at the calories count of the foods you are consuming and determine if you are eating enough to lose. When I do not eat enough my body seems to want to hold onto everything because there might not be enough and so there is no loss. Just something for you to consider.

Anxious to try your ice cream recipes. THANKS!

No prob!

As for the eating enough thing, today I've eaten more than I usually do EVER....probably upwards of 1700 calories, which is abnormal for me.
I feel like I'm craving SOMETHING, anything...I hate days like this.
Anyways, I eat some nuts and usually at least 1/4 - 1/3 an avocado a day. I feel like I'm eating TOO MANY calories...I'm only 5'1, and I think my metabolism is slow to begin with...it's just an ongoing issue.
I WANT to just LET GO and eat whatever whenever but stay raw, but I so far it's been very hard as I have only gained weight.

From my experience, I suggest trying to eat more avocado. I eat two per day. I am 5'2 1/2" so I understand. When I look at the list of foods you eat and your calorie count for that day, I get the feeling you may have a different calorie chart than I do!

Good luck in your weight loss efforts. Today before breakfast I had a green smoothie of tomato, onion and spinach. About an hour later I had a large avocado (equivalent to 2 small ones) with tomato again. For lunch I had a huge salad. Throughout the day I ate 4 peaches. After supper I made fudge and devoured a large portion. That is typical for me. Prior to RAW I limited my calorie count to about 600 to 800 per day simply to maintain. I love RAW because when I am hungry I can eat and not worry about gaining.

Hope you feel better about your weight soon . . . it is miserable for me to feel that way.

sorry to hijack thread here, but your posts sparked my interest. Do you mind if I ask a couple questions? How long did you restrict calories at 600-800, did you go right into eating raw and notice the weight loss? How many calories per day now do you think you consume?
The reason I ask is that I have a friend Im trying to convince to go raw who has battled with her weight for quite some time, she thinks the only way to get rid of the weight is starving herself on 600 calories or so, yet she is at a standstill now and not loosing weight. Your story sounds like inspiration I could share with her :)

Many years I have tried to limit my calorie count to starvation level. Of course, it just isn't possible to stay at that low a calorie count and there were days when I simply lost it and pigged out. Not surprising, huh?

Yes, I was pretty faithful at 600 to 800 calories for months immediately prior to RAW and I immediately began losing. You can look at my signature below and see how my weight loss has been. Not drastic, but I am very happy. And when I am hungry I eat irregardless of calories. Never count calories since I have been RAW which is not quite a month yet.

Not an expert, but it seems to me that the weight loss got easier when I started eating two avocados per day. My emotional condition improved drastic at the same time . . . I give avocados a lot of credit.

Belle, forgot to mention . . . I have no idea how many calories I consume now. I never count. I am sure to have a green smoothie, all the veggies I can eat shortly after the smoothie, large salad of many different veggies for lunch. I may eat half a watermelon, or whole cantaloupe, or 4 peaches, as fruit in the afternoon and evening. I usually eat nuts in the afternoon also. Quite often I make Raw Fudge and thoroughly enjoy that. My main focus is at least a large handful of greens such as spinach per day as well as 2 avocados. And whatever else sounds good!

I have made this mango ice cream for children and adults - everyone loves it. Just made it for a friend and her 2 boys who came over for a swim - the youngest (10) told his Mom as they were leaving that she had to get that recipe!

Organic Red Mango Ice Cream Sherbet (Raw)

Ingredients

3 Cups Fresh Red Mangos
1 Cup Spring Water
1/4 Cup Coconut Butter
1/2 of a Vanilla Bean
1 TB Lime Juice
1 TB Lime Zest
1/2 Cup Agave or Maple
Pinch of Salt

Blend the ingredients in a blender until smooth and creamy. Transfer to your ice cream maker and process.

If you don’t have an ice cream maker, pour into a freezer safe bowl and cover to place in the freezer. It won’t turn out as perfect as in an ice cream maker, but it still comes out very good. Due to the coconut butter in this recipe, it melts a lot faster then most other ice creams or sherbets, as you can see in my photo of it melting. It shouldn’t be a problem because it usually doesn’t last long as soon people get their first taste.

This is one of the healthiest ice creams you can eat, but it really is a treat. Very rich, creamy, tangy and yet light. The lime is key in this recipe as it gives it a tangy kick and zest that is so refreshing.

Hm....I don't know. I think sometimes I overeat past what I would consume in a normal situation out of anxiety.
It's hard for me to know.
If I restrict I do lose weight, but what is the point if I can't keep it up long term? That's why I came to raw. And at first it was hunky dory and I didn't gain an ounce, but now I just hang on to everything I eat, despite my level of (or lack of) athletic activity.
