View Full Version : a nice tomato soup?

Who's got a really nice cream of tomato soup recipe, sort of like if you tried to make the canned stuff from scratch.

hubby is gazpachoed to death, so I was thinking more of a cream of tomato.

I have some "raw" cashews on hand, I have a VitaMix. Any nice recipes? We have such nice heirloom tomatoes coming at us from the garden.

Easy Tomato Soup
Tomatoes
Sundried Tomatoes (about 3-4 per tomato)
1-2 Garlic cloves
Spices

Cream Of Tomato Soup
2-4 Tomatoes
½-1 cup Water
1 Garlic clove
½-1 Avocado
1 Tbs Olive Oil
Dash Salt
Dash Cayenne
Spices
Optional:
¼ Red Bell Pepper

do you soak the sun dried tomatoes first? then blend all together?

I don't, but you can if you want. If you don't have a powerful blender that's probabably a good idea. I blend the tomatoes first & then add the sundried.

Hi exerb...

My sweetie makes this awesome raw soup. It requires a juicer and then the Vita-Mixer. The avocados make it creamy.

Soup Base
6 tomatoes
6 carrots
3 sticks celery
2 cucumbers
1 bell pepper
1 medium sized avocado
1tsp sea salt

Juice all the vegetables and transfer juice into blender along with avocado and salt. Blend until smooth.

Veggie Garnish
1 avocado, cubed
2 sticks celery, thinly sliced
2 tomatoes, diced
small handful basil, chopped

Makes two large servings.

If you don't have a juicer, you could try only blending all the ingredients. Would probably be good, too.

The Cream of Tomato Soup is so delish! I added more garlic and spices. This tastes much better then any tomato soup I've tried yet.
