such as my santa cruz organic 100% lemon juice and edens organic sauerkraut....suddenly aware that these are not actually raw?????

Probably not. If any jarred food you open has a "vacuum" seal, then for sure it's not raw...

It is possible to get sauerkraut that is raw, check if the maker decants the kraut into the jars, if so it is pasteurised to make the seal. There is a possibility that the sauerkraut has been fermented in the jar, it is a valid kraut making method, if so the fermentation seals it.
Otherwise how about making your own? It is very easy. Here is a site with step by step instructions and a video:

I have seen saurkraut in a bag in the refrigerated section before. I haven't read the label so am not sure the process it went thru, but maybe that is an option.

Oh, I'm sure that is processed. Plus it's packaged in a plastic bag - ugh!!!
