YES, yeast will rise, but it will continue to rise in your body, and cause all kinds of distress.
You definitely DON'T want to eat yeast raw.
You can make fluffy types of raw breads with corn and almonds, I do this, it is great, just don't dehydrate to crispy.
Although what you are craving is the wheat, not the fluffiness. (probably) Wheat is highly addictive, and I have that same challenge.
If I slip up, and eat wheat, I end up taking about 1 week of struggle to get back off of it.

Yeast will rise at about 80 to 90 degrees, however it will also rise in your body, unless it is killed by heat, or with enough salt.
The best you can make raw, is a tortilla type thing, or a flat bread, or some breads with almond pulp, which will make them much lighter.
I have a breads, buns and rolls uncook book that I wrote, and there are many wonderful bread type recipes in these books, but if you are looking for the wheat cooked thingy, it won't help, as it is raw.

Alissa has a burger bun in her book. I've made them three time so far. VERY good, VERY filling. They look like the "real" thing only so much more satisfying.
Injoy ~
