Here is the newbie with more questions....
I've been making almond milk and I love it!! It's so easy and I blend it with a frozen banana for breakfast!! Yummy, My son loves it too. I Can't keep enough in the house.
1st question: I've been buying organic , raw almonds. I saw some Raw Almonds, that weren't organic and they were 1/2 the price. I can get raw almonds through a co-op and the regular, raw almonds are almost 1/3 of the price of Organic.
Do almonds retain alot of the pesticide? Can I get away with regular raw almonds?
2nd Question: What other nut milks can I make? Any suggestions?
3rd and final question: (I promise :rolleyes: )
I feel like I"m not eating enough greens and veggies. I feel like I am eating more fruit and nuts. Don't get me wrong, I feel great and i'm losing weight...but Am I suppose to get a certain amount of greens in? FYI: I'm on day 20 of 100% raw.

If you can afford it, always buy organic. Don't compromise your health to save a few bucks.

Green smoothies will help you get your greens in. Just throw some greens and fruit in a blender with a little distilled water and ice and you have an instant meal that helps with weight loss and the kids will like it too.

I'm pretty sure you can make milk out of most nuts and seeds.
The most common ones are:
Almond
coconut
cashews
sesame
I really am enjoying the sesame milk these days since I have an intolerance to almonds. Almonds are most likely on their way to being pasteurized as of September I think.
I use about 1/2 cup of sesame seeds ground in coffee bean grinder then put in blender with the rest water, blend and strain.

Organic food not only saves you and the environment from pesticides and chemicals, but it's almost always more nutritious. There have been studies done showing organic produce has sometimes hundreds of times more of certain nutrients than non-organic!
As for greens, Victoria Boutenko (author of Green for Life, WONDERFUL book!) recommends eating 2 bunches (meaning the bunches sold in stores) of greens per day. Pretty much the only way to do that is green smoothies...unless you really like salads :)

Someone told me celery counts as greens, is this true?
What about cucumbers? Greens?

I love almond milk, too. It's my favorite of all the nut milks. I have made cashew milk before. It's really rich like cream. I like it in smoothies, but my 7yo daughter thinks it's too rich. She prefers almond milk. I have also made sunflower seed milk. Different taste. Not bad, just different. Experiment and see what you can come up with.
I don't usually add celery or cucumber to my green smoothies. Lately, I have been juicing them along with carrots, beets and apples. It makes a lovely healthy drink. I do use spinach or romanine lettuce or collards or kale in my smoothies, though. If you don't feel like having a salad, just blend a smoothie, make some veggie juice and drink your salad.

Brazil nuts make a beautiful mylk. Also, for the cucumbers, they make an excellent juice! By themselves, or you can add an apple for cucumber/apple juice. You're still at the beginning, so when your body is wanting the greens, it'll let you know, I'm serious. You're doing so great! I'm so proud of you!:D

I am only on day 11 of all raw, really enjoying it so far. How about you? Care to share how you make your almond milk? That is another thing I am interested in trying. I can't beleive all the new stuff I've by trying lately! lol

I soak 1 cup almonds usually overnight, but 2-3 hours is fine. Add the almonds to 3 cups of water. Blend thouroughly. Strain.
Then, for a smoothie, you can add some frozen bananas and other fruits, maybe some spinach, romaine or collards, some flax seeds and make a yummy shake.

WHy do we soak the almonds? I read in Alissa's book to soak anywhere from 24-48 hours? You only soak 2-3 hours?

I usually soak my almonds overnight. They are soft and ready in the morning for smoothies. The reason for soaking is to release the enzyme action. It is best to soak them overnight, but in a pinch when I have wanted a smoothie RIGHT NOW;) , I have soaked them for 2-3 hours and they are soft enough. The enzymes are probably not all activated, but a little soaking is better than none and I don't want to use regular milk.

Celery is a leafy green, yes. Cucumbers are not. I believe they are a "fruit," kind of the same way a tomato is. :rolleyes:
