I made the corn tortillas in Alissa's book but they tasted very "flaxey" and not "corny" enough. Has anyone tried making them without the flax? :)

I haven't. The flax is what binds them together. You could substitute chia seed for the flax I'm thinking...dunno...

I have not made those tortillas yet either BUT I did make some yesterday without flax seeds. I used psyllium husks instead and they turned out pretty good though a little chewy. Might want to try the psyllium as a binder.:)

Tortillas that you buy at the grocery store ARE cooked. The tortillas we are talking about are ones that you make yourself from raw ingredients and then dehydrate at a very low temperature so the enzymes stay intact.
Hope that helps.:)

'Flax' is flaxseed.
The seeds and oil of the flax plant contain substances which promote good health. Flaxseed and flaxseed oil are rich in alpha-linolenic acid (ALA), an essential fatty acid that appears to be beneficial for heart disease. ALA belongs to a group of substances called omega-3 fatty acids.

I'll try the psyllium and see how it works. I wonder if hemp would work as a binder.

ross you could try your public library for other raw books in general, or go to the catalog where they can get stuff in from other nearby libraries.
I've never seen Alisssa's book at a library unfortunately, but there have been lots of others, I would recommend Raw Food Real World by MAtthew Kenney and Sarma Melngailis, and Renee Loux Underkoffler's book I think it is called "Living Cuisine" for a good start. Also maybe Gabriel Cousens MD "Rainbow Green Live Food Cuisine". I've seen all those at the library.
