Hi,
I’m wondering if anyone can help me out. I’m a recently diagnosed Type 1 Diabetic (at 43!). I’ve always eaten well—organic, mostly veg, very few sweets—so the shift away from sugary things has been easy. Cutting waaaay back on grains, though, has been brutal. A friend introduced me to a couple of Alissa's cracker recipes as low-carb alternatives to conventional crackers. That led me to her cookbook, and now I’m looking forward to experimenting with this new way of eating.
HOWEVER, the book doesn’t include carb counts (understandable—I certainly wouldn’t be counting them if I didn’t have to!!). I can find carb counts on the internet for most foods, but am finding it difficult to find carb counts for sprouted grains, nuts and seeds. Any helpful info on this?

I ordered some Lydia's Organic Crackers and there was no nutritional info on the package either. I thought this was a US federal guideline that had to be followed but apparently not.
