Some of the ingredients aren't raw, but I think they could be adapted easily:

Tomato Paprika Salad Dressing
adapted from Body + Soul

Tomato-Paprika Salad Dressing

What You Need

¾ pound plum or heirloom tomatoes
2 tablespoons red wine vinegar
1 tablespoon balsamic vinegar - use ACV for both, or use own discretion
1 teaspoon light brown sugar - use honey or agave?
1 small garlic clove – pressed
½ teaspoon mild or smoked paprika
¼ cup extra-virgin olive oil
Coarse salt and freshly ground pepper

What You Do

Press garlic and set it aside to allow the healthy enzymes release.
Peel, core and seed tomatoes. If peeling tomatoes are new to you read Yum’s helpful tips on this culinary task.
Place tomatoes in blender along with vinegars, sugar, garlic and paprika. Puree until smooth.
Remove center cap of the blender lid and add oil in a steady stream, blending thoroughly.
Salt and pepper to taste.

Wow, thanks for posting Smiling Raw Dancer!

I just made this (not with smoked paprika, with the regular dried kind). It is delicious, and I especially love a salad dressing that dilutes out the vinegar and oil, so it's great for that, and to use up all those tomatoes that the garden are throwing me.

In my Vitamix, I didn't have to peel or seed the tomatoes at all, I just blended it all up and it's smooth. Also I really liked the technique of pouring the oil in a stream into the VM, it's like when you make homemade mayonnaise, it gave the dressing an emulsified, thicker feel to it.

Any idea how long it will keep nicely? I put an extra clove of garlic in it trying to keep it longer, and it tastes good, not too garlicky. I didn't use any sweetener, my tomatoes are nice and I did use the balsamic :cool: I have which is also quite sweet.

I'm kind of paranoid about keeping things long...for ME, I usually halve recipes and keep for 3 days tops. If it smells and tastes fine, keep it :)

Just picked a load of plum tomatoes this morning. Will definitely give this one a try. Thanks for sharing ~ Cathy
