View Full Version : Blueberry Suprise Ice Cream

I posted this to the raising kids forum...
But just in case, here you go again. I served this for dinner tonight :)

Bwah hahahahaha....

Juice 1 LARGE beet
2-3 carrots
1 stalk celery
(1 FULL pint jar worth of juice)

In a vitamix

Add LARGE bunch(about 1-2 cups loosely packed) chickweed (you could use any green but chickweed is fabulous and mild tasting but extremely healthy)
3-4 pitted apricots (I froze mine)
1 small lemon peeled (mine was not organic hence the peeled)
2T agave
1/2tsp non-alcohol vanilla (optional)
3 cups frozen blueberries.

Blend (you may have to warm the blender a little because this gets frozen and thick REALLY fast. I had to warm mine so I could process without burning out the vitamix)
I warmed it by running warm water on the outside of the blender just enough to melt it a little bit.

Serve in bowls.

What a way to get your veggies, i will try it today.
I just purchased 5 large beets off the sale rack at my favorite store last week and now they won't go to waste, i also have some frozen blueberries in my freezer. And i have loads of kale in my garden, i will use that. I wish i could get some chickweed seeds, do you think you could mail me some or maybe even put a few plants in those bubble mail envelopes and send them to me? They may survive enough to plant.

I don't have any chickweed seeds- I forage my chickweed because it grows rampant here...
You might try mountain rose herbs or richters for some herb seeds.
