View Full Version : Anyone with a cucumber soup recipe?

A friend of mine once made a cream of cucumber soup (not raw) and it was so light and refreshing. Anyone have a good raw cucumber soup recipes that would be good for the summer? (Preferably one that does not require the use of nut butters/milks).

This recipe gets great reviews, although I myself haven't tried it. The avocado lends it some creaminess without the use of nutmilks. It calls for a "sour cream" topping, but you could probably omit that with similar results.

I make a very simple and easy cucumber soup all the time.
I love this--perfect for summer.
Not sure were the original recipe came from, but I got the idea from a local
chef in Dallas, Cynthia Beavers.

In a blender, blend until creamy and well blended:
1 cucumber
1 avocado
fresh dill (or dried will work too)
fresh lemon juice to taste
optional: celtic sea salt

that's it. You can adjust everything to your taste.
It's pretty creamy with this ratio. If you wanted it lighter
add more cucumber or use just 1/2 an avo.

Wow! Thanks so much for the replies. I'm definitely going to try these when it gets warm again. It's supposed to be cold and damp here all weekend!!
