ok, so i love love love sushi, and i never get tired of experimenting with different things. my all time favourite is:

nori

with this filling instead of rice:
(put in the food processor)

1/2 cup raw cashews
1 tbs (or to taste) coconut oil
to taste- curry powder
and a dash of salt

and various vegetables.

what do you put in your sushi!?

well i haven't made raw sushi yet but i bought a bunch of ingredients bc i plan i making it real soon. i still need to buy nori and need to come up with a good rice subsitute. for the filling im using avocado, cucumber, carrots, red onion and enoki mushrooms. some vinegar too.

mmm sushi. so good and so healthy.

i'm curious about fruit sushi...

it might not be so good with nori, but if you could make some fruit leather in the ol' dehydrator (which I don't own), wrap up some strawberries and stuff...that might be good!

that does sound good and for the "rice" portion, make some sort of sweet dried fruit based paste or something. i need to go shopping and experiment.

For rice substitute, I've also read about people using cauliflower pulse chopped in the food processor...I haven't tried it yet, but I bought a head of purple cauliflower just for that purpose, so hopefully it works!

Do you soak the cashews?
Your recipe sounds really good and just might be what I'm looking for in a nori roll!! :)

yea i just bought a white head, i should have bought a purple one! next time i will. post pics if the come out really cool looking.

yep..on Alissa's DVD, she uses white cauliflower in nori rolls..

looks just like rice.. so white may be better for the 'visual aspect'


i must admit, i am becoming a sushi junkie.. i just love putting in all kinds of veggies..

i finely grate carrotts.. and then pack ( i mean pack it intothe nori..
(you know, a long, fat line of finely shredded carrotts.)

i should take a picture of the finished product.. it is BEAUTIFUL and tasty also..

Wow! I seriously have been missing out!! I just made some sushi and it is amazing!! Just the right amount of everything for a nice sweetysaltysavory treat!

I made a filling with
Cashews
Pecans
Sesames
Coconut oil
Sea salt
Curry powder
some water

I put it in the food processor and whirred it for a bit
I got my seaweed out (roasted, unfortunately) and spread some miso on it and put romaine down the length of it and put some cashew mixture on top and rolled it up!

Delicious!!

the coconut curry combo is killer!

as for your question, i don't soak them. i guess i should...but...well, when sushi strikes, sushi strikes!

i don't eat so many of them though. i usually make my veggie ones the main course and the nut ones like an appetizer...

Ok, I used the purple cauliflower "rice", and Ani Phyo's recipe for almond ginger pate.......soooooo good, if I do say so myself! I like to make a little of Alissa's mock tuna recipe (a celery sunflowerseed mix) - spread it on the nori and then put my veggies in - carrots, red pepper, asparagus, etc. then I roll it up and stuff in some soaked barley on the ends to fill in the holes. Barley works out great as a rice substitute. I make rice ones for the hubby as well.

i just made a really good sushi salad. i was getting lazy rolling them up so i figured it would be just as good as a salad. i chopped up cauliflower very finely and added rice vinegar and garlic, oregano, etc to give it flavor. for the rest of the salad i threw in bean sprouts, cucumber, avocado, shredded up nori, a bit of baby spinach and some red onion. delicious.

Nori rolls with sweetsour dipping sauce!

Rolls:
Nori (raw! yay!)
zucchini sticks
red and orange bell pepper sticks
red miso
lettuce

Dip:
Apple cider vinegar
Agave
Sesame seeds

I added too much miso, so the rolls weren't that great. At least my animals enjoyed it!
I'm really itching to make the cashew sushi again, I just bought more cashews! Mmm

dudes you're missing out!;)

forget the cauliflower etc for the rice.

Try in your FP: pine nuts, fresh peeled parsnips, a little rice vinegar (not raw condiment). The sweetness of the parsnips helps make this very yummy. If you accept using the rice vinegar, it gets the closest to regular sushi rice, which is made with rice, salt, sugar, and rice vinegar. If you like your sushi rice sweeter and you don't find the parsnips sweet enough, you can add some sweetener such as agave.

Charlie Trotter and Roxanne Klein's book Raw has a nice sushi recipe also with wakame.
