I have been reading Ann Wigmores book Recipes for life. She is big on sauerkraut. I followed her recipe but not sure if I did it right. It set for 7 days at room temp. It smells sweet and sour. The cabbage and carrots are still crisp. Does this sound right?

Also are there any Candida recovery people out there? How have you done on fermented foods? Raw diet? What foods helped you in the beginning?

Does it taste like Sauerkraut? It has been a Long time since I have made it. I am sure it is fine, if it has the taste. It's amazing how simple it is to make.

Sounds pretty right to me. My first batch I made was definitely not good. It was hot flavored and soft. I do add a probiotic to my batches. But yours sounds like it turned out great!

I have only tasted store bought a long time ago. I assume this would taste different and be much better for me.
