I don't really know what ethnic dish this is but its so good. I actually found this recipe in a vegetarian magazine that I was browsing through.
4 larte ripe tomatoes(cut into large pieces)
1 large green bell pepper
2 clove garlic (sliced)
1/2 cup extra- virgin olive oil
2 tablespoongul vinegar (I used raw apple cider vinegar)
2 teaspoonful salt (I used sea salt)
ground black pepper (optional)

Place all in food processor. Stir in 1/4 to1/2 cup water, enough to give it a consistency of a thin milkshake. Cover and refrigerate until well chilled. Can also use a couple of ice cubes to chill it.
I just found a new and delicious way to eat my tomatoes.

whole foods makes a partly raw gazpacho that is delish.

they have less pepper in it (which is probably why i like it so much).

for that version i would add:

chopped cukes
diced avocado
corn kernels
and
CUMIN.....that is the secret, take it over the edge to GLORY, ingredient!!!
