is this just lemon juice? I had some fresh/emerald valley, 100% organic salsa last night. but this was the one questionable ingredient

My dehydrator instruction manual says that citric acid can be used to prevent or decrease oxidation when dehydrating. It is sold in drugstores/pharmacies.

I don't think it's just lemon juice... though I dunno if it's made from lemons or what. I bought some once to make those fizzy bath..things.. and it's a powder, so I'd guess it has been dried and probably isn't raw. But maybe in food they use a liquid form? Not sure.

This explains it. And it's a really bad aditive if you have allergies. Especially mold allergies.
