The shells were made of coconut water, coconut meat, psyllium and a dash of sea salt- dehydrated until flipable then dried almost through to where they were still nice and soft and workable. Then I rolled the meat and dried them till they were still soft but the ends started to get crispy. I can't remember the exact measurements or exactly what I did, it just kind of came together on it's own LOL! I wanted to make a nut free meal that wasnt quite so heavy so I just started adding red peppers, tomato, carrot, sunflower seeds and mexican seasonings until it was thick and meaty colored and tasted PERFECT! I will definitly be making these regularly, maybe even freezing some to see how well they keep. I had started out with 5 instead of three but couldn't keep my hands off em before they were done! The Island Chipotle sauce is ground chipotle peppers (add as much as you can handle, you can make it mild or really kickin!) made into a chipotle sauce with apple cider vinegar, carrot, onion, tomato, garlic & salt. That is the standard chipotle sauce I make, the tropical one has dried then soaked pineapple blended in! Tamarind and orange juice go well in a chipotle sauce too!

Thanks! :D That salad tastes better then ANYTHING ANYWHERE I have ever eaten! Cooked or raw! It's just leaves with dressing but the dressing is UNREAL except that it actually is very real LOL! If I could eat only one thing the rest of my life it would be that salad! :D The dressing is a combination of 3 different recipes actually, just stuff I had on hand this week that sounded good! I used some miso tahini dressing and some sweet sunflower mayo and I used some of the marinade from the eggplant bacon in there too! It just came out better then I every imagined!

Ok Honey, time to get some sort of recipe book out there. Even if it's just an e-version...please, for the sake of those of us who drool over your food. Seriously though! Come on girl. You got talent!

Wow - you're right walnutty - these DO look amazing! Sadly, I'm one of those people who greatly benefit from having a recipe. Are you going to make these? If you do, can you share how your 'recipe'?
