Im researching some good autum recipes on recipeezaar. im looking up cooked ones that appeal to me and figuring out how to make raw versions. this one is a good one http://www.recipezaar.com/106811
however, is there anyway you can make the spagetti softer like the cooked version w/o cooking it?

dehydrate it, just a little while... careful it doesn't dry out too much.

what about marinating it in something?

It has been my experience that marinating it seems to crisp it up. VERY lightly oiled and dehydrated for a short while seems to soften like SAD pasta. Let us know how your dish comes out.

rub the zucchini noodles with some sea salt - this will draw out moisture and make the m "limp" - or even soak them in some salted water for a little while :)
