I was surfing for new recipes and found this one on the Whole Foods Market website, I haven't tried it yet but it sure does sound good! If anyone tries it please post what you think or what changes you made, I'll try it this weekend and post my results too.
Pine Nut "Tabbouleh"
This recipe takes a twist on traditional tabbouleh by substituting pine nuts for bulgur. Ripe, juicy tomatoes and fresh herbs are key to the success of this dish.
Serves 8 as an appetizer
* 1 red bell pepper, diced
* 1 yellow bell pepper, diced
* 1/2 red onion, diced
* 1/2 bunch flat-leaf parsley, leaves finely chopped
* 1 small bunch mint, leaves finely chopped
* 4 medium tomatoes, seeded and diced
* 1 cucumber, peeled, seeded and diced
* 1 cup raw pine nuts
* juice of 1 lemon, or more to taste
* 2 tablespoons extra virgin olive oil
* sea salt, to taste
* ground pepper, to taste
Mix peppers, onion, parsley, mint, tomatoes, cucumber and pine nuts in a large bowl. Toss gently so as not to bruise the vegetables and herbs. Drizzle with olive oil and lemon juice and sprinkle with salt and pepper. Taste and adjust seasoning.
