Hi all,
I think most of us would agree that the beauty of eating raw is that you can make it as complex (i.e., elaborate gourmet meals with dehydrators, etc.) or as simple (grab some fruit and nuts, etc.) as you want.
I'm trying to come up with a way to make a raw food diet as simple as possible. I have several reasons for wanting to do this: I'll be starting grad school soon and that means classes and teaching and I won't have time to spend on making elaborate dishes in the kitchen; also, lately my kitchen has been overrun by cockroaches and other nasty insects :( and though I'm working with my apartment manager to solve this problem, it's made me psychologically grossed out and I would rather not spend too much time there, as the places where the roaches seem to congregate are the places I use most in preparing food.
I've made the following list according to how easy/complex it is to prepare:
On the Go:
Fruit
“Hand” Veggies (baby carrots, cherry tomatoes, string beans, romaine leaves, pre-cut broccoli and cauliflower)
Raw nuts
Dried fruit
Raw food bars
Minimal Preparation (i.e., blender/food processor not required):
Tahina dip
Guacamole
Chopped veggies (celery, cucumber)
Salad of pre-cut greens, baby spinach, olive oil/ACV/orange juice dressing
Celery filled with nut butter
Medium Preparation (i.e., throw everything in a blender/food processor):
Zucchini Hummus
Nut pates
Salad of 2 veggies (such as romaine and celery or spinach and green onion) with fruit-based dressing (Blueberry Dressing, Mango-Pineapple Dressing, Apple Pie Dressing)
Vegetable/Fruit Salad with nuts and dry fruit
Date (soaked and mashed), nut butter, and honey mixed to form a ball and refrigerated
Smoothies (fruit-based and green)
Raw soup
I'd love to hear from anyone if they think I missed something. I do have the book "Raw Food Made Easy" which has been a huge help.
