I am new here, by the way, so "Hi everyone!"...

I don't recall seeing any recipes with vinegar in my raw food books, unless it's raw apple cider vinegar. Anything with apples is "iffy" for me at this point, since I've been allergic to apples for as long as I can remember (sick to your stomach kind of allergic). I'm not sure if my food allergies will clear up if I eat raw foods or not, but for now I am stearing clear of foods that cause me problems. I love balsalmic and red wine vinegar in salad dressing, but I didn't know if they were raw or not??

I doubt it considering the process for packaging even if they were raw to begin with, which I don't think they are. I think the only "raw" vinegar is raw apple cider vinegar.

Eden Foods makes a raw red wine vinegar...see it here (http://www.edenfoods.com/store/product_info.php?products_id=103560)

It can also be found in many health food stores as well as some Whole Foods stores.

Well I guess I screwed up. I had a little on my salad thinking it was raw.

my understanding is that most red wine vinegar is actually raw. You can make your own and know it's raw by leaving red wine (which is usually raw) to ferment further. If you want to speed it up you can add some "mother" from the ACV.

I think most of the balsamic is not officially raw as it is cooked down to reduce it.

Some raw types use a little non raw condiment without sweating about it too, so if you love these you could still consider using them anyway.

Mmm... It tastes like a dry red wine - not the exact same depth of flavor, but similar.

If you've tasted apple cider vinegar, red wine vinegar tastes pretty different. To me, apple cider vinegar has a fruity sweetness from the apples but at the same time tastes fairly tart, and has a sharp bite. Red wine vinegar seems less pungent...lighter in tang, with smooth medium flavor notes. I think the red wine blends more easily with complex flavor combinations than the apple cider. But I enjoy them both! :)
