View Full Version : Raw cacao, have powder and butter need using up

I have about 400g of raw cacao powder and 250g of raw cacao butter that need using up before they go past their use by date.
So far my chocolate experiements haven't worked too well. They have been very bitter. I have tried adding the powder to green smoothies, but it was very bitter. I added agave but that made it sickly. I have made chocolates in icecube moulds, 1 batch was too runny, 1 had too much maca (bleurgh) and the next just tasted fatty and not chocolatey!
So what are your favourite cacoa recipes? (preferably idiot-proof ones please!)

Mix cacao with date and ground walnuts to make a brownie
Add cacao to banana and nut milk smoothies for a rcih chocolatey shake
cacao plus avacado make a decent pudding

Did you try the RP Brownie recipe or the fudge balls in alissa's book?
There's a chocolate cream pie recipe in another thread. It uses carob though. I was using cacao when the recipe calls for carob because I didn't have carob at the time. I used carob only once and didn't like the taste, but I will give it another try with that chocolate cream pie recipe.

Is there much difference in taste between cacao and carob? Can you use half and half?
I tried cacao and avocado but it was very bitter and i didn't like it! did you add anything else?

For a pudding this is my new tried and tested recipe:
1 avocado
enough almond milk to make it creamy
table spoon of honey or agave or smooth-blended dates with water (your choice)
spoonful of cacao to taste.
Soooo yummy and creamy!
