Need immediate advice please. Getting to make mock salmon pate. I got some walnuts from the health food store today and they were just labeled "organic walnut pieces". They didn't have any that were labeled raw. Do you think they were raw? They don't taste toasted or anything but I don't often get walnuts and the other hfs labels them as raw.

Hi KellyL -

walnuts need to go through a drying process to keep them from molding. Most processors use heat by propane (sometimes reaching 200 or more degrees), but there are a few farmers that air dry.

Oh no :( I just made the salmon pate with them. I used 1c walnuts in the recipe. I guess I will just eat it. I don't want to waste it. Thanks so much for letting me know that.

Kelly, take note of how YOUR body feels after eating the walnuts. You have to learn that you do the best that you can and what is allowed by your own body. I've never, ever had a problem with the walnuts that I get in my local co-op or natural health food stores. My body definitely knows the difference (and let's ME know it) between roasted/toasted/cooked nuts and ones that are not and the nuts in the natural food stores are just fine for me, personally. But again, tune in and listen to your own body and it'll let you know.

P.S. Could you shoot me an email Kelly? Yours isn't available so please email me from my profile. Thanks! :)
