Young thai coconut meat in the freezer?

Anybody know how long young thai coconut meat will last in the freezer?

I have never frozen any. Do you plan to Freeze a little or stock up on a lot?

Should be fine. Just put it in when of them Zip Lock freezer bags to prevent freezer burns, and it should be aces. No problema. You can even freeze the water...

I've been doing low-fat raw, but I've been drinking coconut water, and don't want to waste the coconut meat, but I don't want to eat it, either, until I've lost more weight (because it interrupts my low-fat raw plan). I thought I'd freeze enough for a big cake or pie, but I want to make sure it won't go bad in a month (I don't like waste...especially of something as delicious as coconut meat :)).
