The last couple times I have bought sun dried tomatoes it was at the open market here so I got to talk to the makers. I asked them what temperature they were dried at and they were a little confused but then I figured out they didn't know what I was talking about because they were all sun dried. I was really happy to find this out! I think probably a lot of the more commercial ones are dried at high temps to increase profit. If you can buy them from a farmers market or something I would definately do that. Have you ever tried dehydrating some yourself? I am going to try dehydrating some in a couple days and at least this way I know they are truly raw.

I suggest drying them yourself if you can't get them from an organic and verified "Raw" source, as Analeah is right...most are dried at very high temperatures to decrease the drying time and increase the profits, making them very very cooked...

NWgal,
I use these and they are wonderful and the best tasting sun dried tomatoes I've used. They are from Italy and truly sun dried.
