My dear, dear friend just dropped off a big ol' bag of produce form his organic garden. It contained the most gorgeous beets. Problem? What do I do with them! Can you eat raw beets? How about the greens? Good in smoothies? 'Cause that's about all I am consuming in this heat...spam me with recipes peoples!!! :D

Simply put the raw beets in your smoothies and salads. :) I don't know about the greens.

My husband and i have been adding them to salads for years and you can add them to your juicer when making green smoothies:p well red smoothies along with sweet red peppers, yum,yum.
I tried this last week and i really liked it.

Do you have a juicer? You can make veggie juices. We make a carrot, celery, beet and cucumber juice every day. Beets are great in juices.

YUMMY. Courtesy of Kathleen Daelemans, "Cooking Thin with Chef Kathleen"....

1 tsp grated fresh ginger (I use a tablespoon)
1 pound raw beets, grated (use more than one color beet if you can get it - makes the salad so pretty to look at!)
1 pound granny smith or similar apple, grated
3 T raw apple cider vinegar
1/2 tsp coarse salt
1/8 tsp cracked black pepper
1 to 2 T extra virgin olive oil

toss ginger, beets and apple until ginger is evenly distributed. wisk vinegar, oil, salt and pepper together, pour over salad, toss to combine, serve. even better the next day! and SO easy to make.

YAY! Thanks for the recipes everyone! I used ALL the greens in our smoothie this morning and OMG wow was it good! I will use up the beets in one of the recipes posted...I have an 'event' to go to tomorrow night that I need to bring dinner for us so I will use one of those :D

Beet Recipe for Beet Salad


Take The Hassle Out Of Meal Planning
Preparation time: 10 minutes
Serves 6
3– 4 cups freshly shredded beets (approximately 2 medium beets)

Vinaigrette Dressing for Beet Salad Recipe
3 tablespoons apple cider vinegar
3 tablespoons cold pressed olive oil
1 tablespoon raw honey
Dash herbemare (sea salt and herb concoction found in whole food store)
Dash freshly ground pepper

Peel the fresh beets and cut them into thick slices that will easily fit into the feeding tube of your food processor. After shredding, you should have 3 – 4 cups of shredded beet for your beet salad recipe. Place shredded beets into a large bowl.

Next, whisk the remaining ingredients together in a small bowl. Taste and adjust the flavors to your liking. The beet is quite sweet so keep that in mind when adjusting the flavors of the vinaigrette dressing. Pour the vinaigrette dressing over the beet recipe and toss gently. Put in a covered dish and refrigerate until ready to serve.
