REVENGE OF THE KILLER ZUCCHINIS....
i planted a few zucchini plants.
ok, now every day i pick 6-10 fruits.

i need desperately some ideas to use them up.
getting tired of putting them in salad or having them as my salad.
tired of making 'pasta' dishes. i do it alot right now.

especially thinking of slicing & dehydrating some for winter use
... will they last? i do not have a freezer.
i made zucc chips today, slicing them thin on the mandolin salting; resting; squeezing excess h2o out; and placing on grid rack..; sprinkling w/ onion pwd and 105 for few hrs. niice.
but i need more variety.
please put your collective thinking caps on and lend me a helping hand with ideas/recipes etc...
i would so very much appreciate it.

ooh ooh!!! Im having the same issue right now! Ate pasta for dinner tonite, made eggplant and zucchini dip yesterday...

Also, "Just like Ritz" crackers:
2 ½ c. walnuts soaked 1 hr. or more
2 ½ c. cubed zucchini
½ c. ground golden flax seed
¼ c. hemp seed
2 teaspoons sea salt
Grind walnut in FP until they are in very small uniform pieces (cous cous looking) - transfer to bowl
Grind zucchini in FP until they are in very small uniform pieces - add to bowl
Add ground flax, hemp and salt. Blend well. Add enough water to make spreadable dough ( 1/2 to 1 cup)
Spread between 2 trays lined with teflex
Dehydrate - Flip - until crisp
Cut in to chips - flat bread or desired sizes.
have u made zucchini hummus? thats another way to use it up.

I've made these crackers with sesame seeds when I didn't have any hemp seeds and they still turned out delicious! Those crackers are really good!

Zucchini makes a great semi-sweet juice if you have a juicer. It is good with carrot. Maybe you could juice it and freeze some for later.

You lucky! I adore Alissa's Indian Spinach dip (I add a small amt. of ground cashews for richness) spread on either cucumber rounds or zucchini. Awsome stuff.

my freinds daughter just married a college age dude thats a chef and i just today told him to visit alissas site and that green chef site in hope that he adds raw to his game plan . between alissas philosophy/nutritional knowledge/recipes , and the green chefs recipes he'd be on a great foundation .

oh yeah, i did the same thing as rawkinlocs...used sesame seeds in the ritz crackers - actually i added half sesame and half hemp...tomorrow when i make them for clients i will use just sesame.
i reeeeally highly recommend these crackers!!!!

You could slice them thin with some kind of spicy marinade and dehydrate them. Zucchinni chips!!
