I bought a bunch of stuff right before I got sick and I don't want it to go bad and I'm currently reintroducing foods slowly, so can I freeze any (or all?) of the following items?
- bananas
- avocado
- sliced mushroom
- sweet corn
- kale
- spinach
- carrots
- string beans
Otherwise, how long will they stay fresh in the fridge?

Hey there!
Bananas and avocados I freeze. Bananas with the peels on. They are easy to "unpeel", just place in a bowl of cool water and within a few seconds (probably a minute) the peels will come off, it not, run under cool water they they will come off. Avocados? The consistency changes somewhat. Make sure they are ripe first (sort of soft when you squeeze them).
Sliced mushrooms - nope, they'll get super soggy. Can you dehydrate them?
Sweet corn you may be able to - remove from the cob and put in a air tight container. It should freeze okay.
Kale and spinach can be blended (even together) and frozen and then used for a smoothie or two.
Carrots and string beans if you you have a juicer, you an juice them and freeze the juice.
If not - the carrots should last the longest in the fridge even up to two weeks. The beans next, maybe a week, then corn maybe three - four days, then the kale and spinach same, 3-4 days, the mushrooms will last the least amount of time.

I ended up using my last 4 bananas for ice cream that's currently sitting in the freezer. : )
