View Full Version : Oh Yum! Almond Joy done RAW

This is not exactly original. I took two different recipes and combined them to make Almond Joy candy. My daughter and husband ate them so fast. We also had some guests over who were loving them. I wanted to get a picture but they weren't around long enough. Guess I will have to make some more. Oh darn.:rolleyes:

But trust me..these are awesome:eek:

Filling:
shredded unsweetened coconut
coconut oil
agave
vanilla
pinch of salt

Sorry I don't have measurements. I took the recipe from this board. I think it was a recipe for mounds. Anyway, take about 2 cups of coconut, enough oil to make it bind, a dash of vanilla and salt and some agave to sweeten.

Dates: remove seed from dates and stuff as much coconut filling as possible making sure to place a cashew or almond in the center.

Chocolate coating: (from maraw's magazine)
¼ cup agave nectar
¼ cup coconut butter or oil (at slightly warm room temp - need to be liquid)
3-4 tablespoons raw cacao powder (you may also use carob)
¼ teaspoon vanilla
pinch of sea salt

Dip almonds in chocolate mixture and place in the freezer or fridge to set.

Then enjoy. Almost feels like you are cheating. :)

That looks like it would be really good! Now, if I can find a Milky Way bar recipe I'll be good to go! :D

Aw, it's nice to be loved. :) Seriously, try them. They're pretty yummy if I say so myself.

Here's a recipe for caramel that was posted by rawpriestess:

1 cup dates (pitted and unsoaked)
1/4 cup almond milk
1 dash sea salt
1 tsp vanilla extract, or 1 inch vanilla bean scraped
1 T raw honey (my note: wonder if agave would work?)

Mix all ingredients in a food processor until smooth and well blended.

to make caramels, place in an oiled (coconut oil or olive oil) shallow pan, and dehydrate until firm, aproximately 24 hours, cut into cubes and freeze for future use. Take out a few at a time to munch on.

For an icecream topping, simply add more almond milk until desired consistancy and pour onto banana ice cream. Top with chopped pecans and dehydrated cherries for a truly decadant dessert.

That caramel recipe is wonderful. I dehydrated them in sheets and then wrapped them around apple slice for caramel apples. They were SO good.

That sounds great!

I usually just put almond butter into medjool halves. I'll have to try this! The one thing I love about raw is I always have every ingredient I'll need for any recipe. :p

Wasn't there something that rawveganmom posted in her coffee recipe that is supposed to taste like nouget? Hmmm.....maybe blending that flavor with some cashews or macadamias, wrap in caramel and dip in chocolate. Oh heck, I am going to have to get busy.

Yeah, maybe? Sounds like it might work...dunno - I just threw out the recipe so you could get busy and report back to us - LOL!!!

Bumping this...we made the top recipe today. My dd loved this, she helped. The chocolate recipe for dipping is soooo good. I'm going to use it for strawberried next. I did't use the dates, dd doesn't like them...unless she doesn't know she's eating them, ha.
can't wait to make the caramel...choc covered caramel!!!
