If you've not made Alissa's, I highly recommend it. I made it for Bo yet, he forgets to eat it so, it's been my treat. GREAT on crackers or w/ veggies ~ in a roll or wrap.
24 Black Olives
1/2 C. Olive oil (I used a bit less)
1/4 C. Parsely (we like the Italian)
1/4 C. Basil
2 cloves garlic
2 Tbl. lemon juice
2 Tbl. mint leaves
sea salt and pepper to taste
Place all ingredients except olives in a blender or food processor and blend until smooth. Add in olives and blend until only little bits of olives are visible.
Chill and serve
I found the amount of olives will differ depending on what size you use. Keep extras on hand incase 24 isn't enough.
