I am planning on making Alissa's Corn Chowder for a potluck this weekend. I haven't made it before and I was wondering how much the original recipe makes. How many servings (cups) would you say it makes?
I am just wondering if I should double it. Normally, around ten or more people come to the potluck. I wouldn't mind having a little leftover for myself to take home.
Has anyone substituted anything else for the Almond milk before? I did a search and saw cashews mentioned which I have used in creamy soups before and have been pleased with the results.
How many cups of almonds would you say it takes to make the required amount of almond milk (which I will probably get my bf to make)?
I am just wondering because almonds are so expensive right now so I want to know how much to buy. I am thinking using cashews and water might be easier than making almond milk.
Also, any tips on how to make it even more "Mexican" - the potluck is a Mexican theme. Not too spicey since little kids usually come.
