View Full Version : help me salvage my unripe avocado!!

I hate it when this happens!! I cut it HOPING that it would be ripe, but then while slicing I knew it was not quite ripe enough. I have eaten them before, but they give me a tummy ache. Is there a way to "ripen" it after it's been cut??

I would love to know this too. Happens all too often and a few times the avo just went bad and never did ripen... anyone???

I have put the pit back in, put the halves back together, and let it sit at room temp until ripe with success. Although a few times, it seemed the avocado just never ripened. Hope this helps.....

3 options....

1. slather the cut sides with lemon or other citrus juice, reasemble and put in fridge for a few days.

2. Process them with some salsa, lemon and a dash of cumin and let sit for a few hours. It will break down the texture and the enzymes will kick in and help digestion.

3. Make soup! Blend with herbs, garlic and citrus to make a soup and serve in a warm bowl.

You may have hard bits that you can fish out afterwards if it is seriously unripe. Not sure how many days it had left to go....

Sorry if this is only a hint for future--before cutting into, you may check the ripeness by pressing (somewhat gently) on the top part by where the avo was cut from the tree stem. It should have a bit of give--somewhat soft but not mushy. If it does not give to gentle pressure, it is not yet ripe for eating. Hope you saved the cut avo and hope this hint helps.

Lady Green....You explained that SO Well. It's just a Thumb Thing. You pick up, press and on to the next one.

If you should get a hard one..You can put it into a BROWN PAPER BAG.......

Thanks ya'll. I KNEW I shouldn't have cut it. It just didn't seem quite soft enough, but I was hoping....then as soon as I tried to get the pit out, I knew it was NOT ripe. Unfortunately I threw the pit away, which sunk deep into a dirty trash can:( Anyway, I queezed lemon over it and put it in a bowl....maybe it will break down and be ok???

Thanks for the tip about mashing around the stem, I never thought about that!!

Thanks again....maybe this will help someone else....by the way, I did have it in a brown paper bag for over a day, trying to get it to ripen.:rolleyes:

I give them to the dog..she loves them and seems to have no problem digesting them. Or use it on your face or skin.

I've been very lucky with avo's. Try putting saran wrap tightly around it and then back in the fridge. Not getting air at it is important. I do this when I only want half. When I want to know if it's ripe, I just squeeze the whole thing. I haven't bruised one yet. :cool:

I try to never buy unripe avocados. They (many, many times) go rotten and I really hate when this happens! But sometimes, I can't resist buying more than I need and then some are not ripe. I found that if you want them to ripen nicely (and even this doesn't work every time), you should put them next to ripe bananas (they have tiny black spots on them). But once you open and unripe avocado I usually just make some sort of salsa with it (Vitamix rules :D ). This is the only thing that has worked for me. Oh, and, of course, I try to wait for the avocado to ripen :) The torture.

I have also had much bad luck with unripe avocados from the co-op or a grocery store......but since we got a Costco in our town I have not had one bad avocado. They are always gorgeous, creamy, never stringy, even if I have to ripen them a day or two. In fact every item of produce I've gotten at Costco has been top-notch.

I almost never have problems with Trader Joe's avocados. I never buy ripe avos because I find them to be bruised... but Trader Joe's has the best price and fabulous avocados. I have had a couple of bad batches but when I buy 12-16 a week I can't expect them to be perfect 100% of the time!
